Let’s make this Blueberry Baked Oats! The genesis of the recipe was basically me trying to figure out what to do with some blueberry compote I made. Sidenote: my two ingredient mousse goes AMAZING with some compote. The concept is to build a super easy blended oats recipe and place half of the contents in a ramekin and place a spoonful of compote followed by the remaining mix. Topping it with blueberries, and some coarse sugar and then off it goes to bake! I wish that the compote didn’t spread as much (perhaps it would have done better if I had frozen the compote) but it tastes so good! .
