Made and served with all things healthy!
Ingredients
1½ cups pearl millet (bajra) flour
1 small onion, finely chopped
2 tbsps chopped fresh coriander leaves
1 tbsp grated beetroot
1 small carrot, grated
2-3 green chillies, chopped
1 tbsp black sesame seeds
1 tbsp white sesame seeds
½ tbsp flax seeds (alsi)
1 tsp red chilli powder
¼ tsp turmeric powder
Salt to taste
2 tsps ghee + for drizzling
White butter as required
Chopped jaggery for sprinkling
Method
1. Take pearl millet flour in a large bowl, add onion, coriander leaves, beetroot, green chillies, black sesame seeds, white sesame seeds, flax seeds, red chilli powder, turmeric powder, salt and ghee and mix well.
2. Add ½ cup water and knead to a soft dough.
3. Dip your fingers in water, take a portion of the dough, even spread on to a non-stick pan and make a small disc. Place the pan on heat, cook for 1-2 minutes on each side on low heat. Drizzle ghee on both sides and cook further till golden brown.
4. Add a small portion of white butter on top of each disc, sprinkle chopped jaggery, cover and cook till jaggery melts. Place the rotis on a serving plate.
5. Serve hot with white butter and jaggery.
