What is more intoxicating than the smell and taste of a fresh plate of biryani?
These were the traditional Bawarchi’s of Avadh who make it the same way as it was done centuries ago.
Slowly cooked over a wood fire, the biryani starts off with ghee and freshly chopped onions, a special soaked solution of special (oops, secret) ingredients, and some grass-fed mutton of courses.
As the ghee melts and the ingredients start to cook, the entire courtyard is rife with a scintillating scent, and there’s no doubt that ‘ki aaj dum biryani ban rahi hai.’
As the meat cooks and exudes a delicious aroma, more secret spices and ingredients are added till you have a plate of glistening meat dripping with deliciousness.
As the pot is uncovered, one is treated to one of the most mesmerizing smells you will ever find anywhere on the planet. The only thing more satisfying is tasting a plate of steaming hot pulao!
