South Indian Style Kurma
For the masala
1/2 cup grated coconut
1 tsp chutney dal
4 cashews
1 tsp fennel seeds
1 tbsp poppyseeds
3 cardamom
1 inch cinnamon
3 green chillies
1/2 inch ginger
Grind the above into a smooth paste.
Heat oil in a pan. Add cumin seeds and bay leaf. Add 1 onion sliced. Fry till pink. Add the paste and fry till the rawness goes. Add 1 small potato cubes. Cook till half done. Add 1 cup veggies of your choice ( beans, carrots, peas, cauliflower) and 1 cup water and salt. Cover and cook till done.
