Mumbri / Cholkya Bhakris as we say in GSB Konkani are flatbreads patted on Cholkos (banana leaves )and roasted on a tava. These are ZERO OIL Bhakris and can be made with the ingredients found at home. Cholko are the end pieces cut from banana leaves. We do not throw them away. Besides using them to make these delicacies they are generally used to serve breakfast or snacks in them. Sustainable living was a way of life by our elders. Coming to the recipe, I do not throw away the watermelon rind and either use it to make dosas or these bhakris. Preferably it is made on cast iron tava because it cooks slowly giving these bhakris a lovely Smokey flavour.
