Changing seasons need healthy food. And what better than a spicy soup.
Ingredients:
2 tbsp Oil (तेल)
1 inch Ginger – finely chopped (अदरक)
2 medium cloves Garlic – finely chopped (लहसुन)
1 fresh Green Chilli – chopped (हरी मिर्च)
1 medium Onion – finely chopped (प्याज़)
1 Dry Red Chilli – charred (सूखी लाल मिर्च)
1 small Carrot – finely diced (गाजर)
¼ medium Cabbage – finely diced (पत्ता गोभी)
3-4 medium Mushroom – small diced (मशरूम)
2 tbsp Soya Sauce (सोया सॉस)
Salt to taste (नमक स्वादानुसार)
½ tsp Black Pepper Powder (काली मिर्च का पाउडर)
1 tsp Sugar (चीनी)
Water (पानी)
1 tsp Vinegar (सिरका)
4-6 French Beans – finely chopped (फ्रेंच बींस)
1 medium whole Spring Onion – chopped (प्याज़ पत्ता)
2 tbsp Coriander Leaves – chopped (धनिया पत्ता)
For Fried Noodles:
1 cup Noodles – boiled (नूडल्स)
1 tbsp Corn-starch (कॉर्न स्टार्च)
Oil for frying (तेल)
For Slurry:
2 heaped tbsp Corn-starch (कॉर्न स्टार्च)
½ tsp Black Pepper Powder (काली मिर्च का पाउडर)
Water (पानी)
Process
1. In a wok or kadai heat oil and add ginger, garlic, green chilli, onion and saute for a minute.
2. Now add charred dry red chilli and then add carrot, cabbage, mushroom saute for 2-3 minutes on high flames.
3.Then add soya sauce, salt, black pepper powder, sugar, water and boil it for 5-6 minutes.
4. Add the vinegar boil for a minute and add french beans, spring onion, coriander leaves, mix it then add corn-starch slurry and stir it continuously until lightly thickened.
5. Serve hot with fried noodles.
