Simple Vendakkai Kari, 🔥Okra stir fry is an excellent combo with all types of variety rice like lemon rice, puliyodharai, etc. Rasam Mammu with Vendakkai kari is akshu’s Favorite combo. At least weekly once I make vendakkai for her. Thakkali Sadam + Vendakkai kari is a tharumaru combo🙈 which i made last week. Meals will not end without Thayir sadam, topped with uppu mangai. Simple lunch sorted!

To make Vendakkai Kari you need tender okra, don't use frozen or woody once. Wash and wipe in a towel before you cut okra. Trim the edge, chop and pat it dry on a clean kitchen towel for 10 to 15mins to avoid sliminess.

📝How to make Simple Vendakkai Kari,
1️⃣Heat a pan with a tbsp oil, add 1 tsp cumin seeds, and chopped okra(250g) roast in oil for a few mins and then add 1tbsp sambar powder, ¼ tsp turmeric powder roast well.
2️⃣Once it roasted well and it turns light golden finally add salt roast for a few more mins and then switch off that’s is Vendakkai kari is ready to serve!

📝Important Tips:
🔥Keep in medium flame and roast it not in high or low flame.
🔥There is 2 reason that we need to add salt at the last stage, first, the okra looks more before roasting. We may tend to add more salt by looking at the quantity after roasted it will get shrink and it will become salty. 🔥Secondly, after adding salt it will release water and it leads to sliminess so always add salt once the okra is roasted well.
🔥In case the okra becomes slimy add a tsp of rice flour or besan and roast, it will suck the sliminess.
